    Beyond Guacamole, Cooking with Avocado

Guacamole is a must-have for any tailgate party, Super Bowl bash or backyard BBQ, but that isn't the only thing the irresistible avocado is good for. With its creamy, buttery texture and rich, almost nutty taste, this amazing superfood is the perfect ingredient for a host of delectable and healthy meals.

Among her 62 recipes, Dyan Merick cooks up a full selection of breakfasts, salads, soups, lunches and snacks, main entrées, side dishes and desserts for you.

Why not try Scrambled Tofu Burritos or an Apple Avocado Smoothie for breakfast? Put Burger Sliders, Mushroom and Onion Naan Flatbread Sandwiches, or an amazing Vegetarian Chicken Salad on your lunch menu. Dinner offerings include Alfredo Avocado Fettuccine, Black Beans and Sausage, and Polenta Stacks with Marinara, plus avocado versions of favorite comfort foods such as chili, sloppy Joes, and spaghetti. Nor has dessert been overlooked. Indulge yourself with light, dreamy Avocado Cream Pie, Date and Raisin Fudge, or a frosted chocolate cake made with avocado.

And yes, you'll even find four different guacamoles

Avocados are a Nutrient Dense Superfood

Avocados are packed with antioxidants, healthy fats, minerals, and vitamins. According to the American Heart Association, the healthy fats in this fruit can reduce cholesterol levels and decrease the risk for heart disease. Lutein, a compound found in avocado, has been shown to protect against macular degeneration, cataracts and breast cancer in women. Avocados contain more folate per ounce than any other fruit, crucial for moms-to-be. Avocados are also rich in glutathione, considered valuable to preventing aging.

If you'd like a delicious way to get more of this nutritious superfood into your diet, start cooking now with Dyan Merick's Avocado Cookbook for Vegetarians.

Note: Though every dish in this book is vegetarian (with vegan options), you don't have to be a vegetarian to love each and every one!

4.0 out of 5 stars The Proof of the Avocado Pudding is in the Eating September 24, 2012

My wife and I have turned to avocados to add healthy fats to our diets so I am very pleased to have discovered this cookbook. While it will win no awards for literary style, the simplicity and variety of its recipes make it easy to recommend.

The recipes in this book are all vegetarian, but the author does suggest vegan alternatives. Omnivores, do not let this prejudice you against the book - it is just as easy to substitute real bacon for tempeh bacon. I know from experience that avocado also pairs well with cheese and turkey, so all of the breakfast and lunch recipes sound delicious and inspire me to try out some avocado-based mains. I will confess to being terrified by the dessert section - yes, there really are avocado puddings!

Overall, a fine self-published work full of tasty ideas. Four stars.

This cookbook made me really realize that avocados aren't just for guacamole. They are good to eat just plain, but a delightful addition to sandwiches.

I love all the uses with avocados. I have added some avocado to fruit smoothies and they are thicker, smoother.
